Nelson's culinary adventure began in Venezuela, where he served as an Army officer. Alongside his wife, Nahyla, a dedicated lawyer, they made the life-changing decision to move to the United States in 2016, seeking safety and new opportunities. Their journey led them to Louisville, where a friend had settled.

Upon arriving, Nelson co-ran a restaurant in Middletown, but after a year, it closed its doors, leaving him to start from scratch. Undeterred, he embraced the challenge, participating in local initiatives like WorldFeast and forming partnerships that would shape his culinary future.

The Rise of Alchemy

In October 2019, the city reached out to Nelson to bring his culinary talents to Logan Street Market. Alchemy Food Truck became a staple, serving delicious dishes crafted from scratch. However, just as business was thriving, the pandemic hit in early 2020, forcing the market to shut down. Most customers were from downtown, which was heavily impacted, but Nelson's food truck adapted, continuing to serve at private and corporate events and festivals in Norton Commons.

For three years, Alchemy's food truck became a beloved fixture, bringing the rich flavors of Venezuelan cuisine to the community. The family-oriented atmosphere and Nelson's warm personality have turned loyal customers into friends, creating a sense of belonging that resonates throughout the restaurant.
