A Family Tradition: From Lumber to Barbecue
River Road BBQ is a family-run establishment, originally started by Krissy Davis' aunt and uncle in January 2012. Her uncle, who spent 40-45 years in the hardwood lumber business, always had a passion for smoking meat. What began as a hobby turned into a full-time venture when he retired and decided to open a barbecue joint. With no previous restaurant experience, the family took a risk, and it paid off.
Today, River Road BBQ continues to thrive, and since 2016, Krissy has been running the show. Having a background in both banking and energy, she wasn’t a stranger to the business world. However, her restaurant experience helped her take over smoothly, turning her uncle’s passion into a successful and beloved community establishment. "I love being the only lady pitmaster in Louisville. It's cool," she said proudly.
Keeping It Simple: The River Road BBQ Menu
When asked about what sets River Road BBQ apart from other places, the answer was simplicity and consistency. The menu started with just pork, brisket, potato salad, coleslaw, and beans, and while it has expanded slightly over time to include chicken, green beans, and tacos, it remains refreshingly straightforward.
“We’re not trying to be something we’re not,” the owner explained. “Our focus is on doing things well and efficiently. With our 32-second ticket times and a 20-hour cook process that starts the day before, we ensure customers enjoy freshly made barbecue every time they visit. For catering, we have tofu available. In January, we also offer a loaded BBQ potato that weighs in at over a pound, and in the spring, you can try our thick-sliced smoked bologna sandwiches.”
The Power of Community
One thing that truly sets River Road BBQ apart is the sense of community. Krissy Davis embraces connections with other local restaurant owners, staying active in groups like the Kentucky Restaurant Association (KRA). These ties are invaluable, especially when challenges arise.
For instance, when her refrigerators malfunctioned recently, River Road BBQ’s neighboring restaurant, River House, offered the use of their walk-in cooler. This kind of collaboration highlights the unique camaraderie in Louisville’s food scene.
Challenges and Rewards of the BBQ Life
Running a restaurant isn’t without its challenges, particularly in an industry where margins are tight, and the cost of goods continues to rise. Despite these difficulties, the rewards far outweigh the struggles for Krissy. "Watching everybody smile and be happy... it’s a great profession. I love it, stressful at times, but I love it," she shared.
For her, it’s the personal connections, the flexibility, and the creative freedom that make every day at River Road BBQ special.
Future Plans: Expanding Within Louisville
For now, River Road BBQ is content with its single location, but there are exciting ideas on the horizon. Krissy Davis is focused on maximizing the potential of their current space, particularly by expanding catering services for corporate events and weddings. A food truck may also be in the cards, offering another way to bring their delicious barbecue to more people.
Advice for Fellow Restaurateurs
When asked if she had any advice for other restaurant owners or small business owners, Krissy stressed patience and community. "If your product is excellent, it’s going to speak for itself," she said. She emphasized the importance of staying consistent and remembering that it’s not a competition. "We’re all in this together," she explained, highlighting the supportive atmosphere that makes Louisville’s independent restaurant scene so special.
